Major Food Group (MFG), the luxury hospitality brand that has redefined dining in the city of Miami, will end the year in true major fashion with the opening of one of its most exciting restaurants yet: CARBONE VINO. Located in the heart of Coconut Grove, this new member of the CARBONE family takes its cues from the legendary enotecas of Italy: warm, welcoming destinations with extraordinary wine and cuisine that are essential to the fabric of their cities.
At VINO, guests will dine on an array of newly unveiled additions to the CARBONE repertoire from MFG Co-Founders Chef Mario Carbone, Chef Rich Torrisi, and Jeff Zalaznick. Befitting its name, the restaurant will offer a remarkable beverage program featuring one of the largest wine collections in Miami and includes iconic wines by the glass, often only available by the bottle elsewhere, if at all.

MENU
VINO’s menu celebrates the beautiful craftsmanship and conviviality of Italian culinary tradition. The meal begins with antipasti like the addictive Zucchini Fritti, a comforting Zuppa di Mussels with lamb sausage, tomato, and basil, and Chef Mario Carbone’s spin on classic Cantonese shrimp toast: bruschetta featuring ruby red shrimp, Calabrian chili, and sesame.
The macaroni section boasts several preparations that can only be enjoyed at VINO, like Pumpkin Agnolotti, Tortellini Con Tartufo, and Spaghettini Bambini. The latter dish is an elevated ode to the buttered noodles Italian children grow up eating. In Chef Carbone’s nostalgic reimagining, the butter is grass-fed and the cheese is a coveted aged Parmigiano Reggiano made from the milk of vacche rosse, the prized red cows of Parma.
Classic recipes of the enoteca style will appear on the menu, including an expertly prepared Pappardelle Bolognese and pitch-perfect Chicken Cacciatore. Signature dishes from Carbone will also be available, such as the Spicy Rigatoni. When it comes to veal, it will be offered in two distinct styles – Parmigiana and Saltimbocca.
Dinner will culminate with desserts like fresh-fried Zeppole, a Chocolate Hazelnut Mousse Pie, Pistachio Tiramisu, and the VINO sweet section’s hallmark: Cannoli Sundaes. These feature homemade cannoli-flavored soft serve with all the classic cannoli garnishes, including candied fruit and fresh-fried cannoli-shell shards.

For CARBONE VINO, Corporate Wine Director John Slover—whose various wine lists for MFG have garnered countless awards—is proud to present a dynamic and unique beverage program that will keep locals and regulars coming back again and again. The collection encompasses one of the largest in Miami with an inventory of over 3,000 bottles across price points and styles from all major wine-making regions of the world.
Connoisseurs will find nearly 100 examples with bottle age from five to twenty years, while anyone curious about wine will be able to try something new on every visit, thanks to the extensive and ever-changing by-the-glass selection. Throughout the year, VINO’s wine team looks forward to shining a light on a variety of their favorite winemakers and styles. In the end, the vision is to create an inviting, effortlessly sophisticated atmosphere where you never know what one of the sommeliers might pull from the cellar and pour for you, just for fun.
INTERIOR DESIGN
Conceived by award-winning Bishop Design, VINO’s interior consists of a series of moody and romantic environments that evoke a bygone era. These areas include a main dining room, a lively lounge, and a private dining room that are each defined by unique elements, such as works of art curated by the renowned gallerist and longtime MFG collaborator Vito Schnabel. The selection boasts pieces by the likes of Rene Ricard, Lola Montes, Francesco Clemente, and Julian Schnabel.
Warm lighting and the careful use of color play a particularly significant role in VINO’s design, with signature fine wine and blue shades selected for a refined touch. The main bar, adorned with burnished bronze accents and a soft arch design, serves as a captivating focal point, seamlessly integrating with the dining areas. Features such as heavy velvet drapes, gold-accented wallpaper and intricately crafted ceilings further contribute to the sophisticated yet approachable atmosphere.
Attention to detail is evident throughout, from the custom-made leather-upholstered banquettes to the meticulously sourced ceramic tiles, all of which work together to create the space’s energetic flow.

The opening of VINO caps off a remarkable year that saw MFG’s global portfolio grow to more than 50 acclaimed establishments everywhere from Dallas to Dubai. In March, GQ Magazine named the brand “one of the most creative companies in the world,” placing it in the company of Apple and Tesla. VINO marks MFG’s ninth endeavor in Miami, following CARBONE, ZZ’s Club, Sadelle’s, Dirty French Steakhouse, Contessa, HaSalon, Sadelle’s at Kith, and Chateau ZZ’s.
